My Favourite Porridge Recipes

So I thought that it was about time to share my biggest love/obsession as I am very passionate about breakfast and more specifically, porridge! I remember life before baby, when porridge was made with water with no toppings, it fuelled me but it was dull and tasteless. So now I am a mummy, I particularly see the importance of a very good breakfast. I always wake up hungry and love the time spent making and eating my breakfast with baby boy! When I was breastfeeding, the importance of breakfast was even more so, I needed all the energy especially after a couple of night feeds!

I am now a total convert to adding protein to every bowl of oats from a few different sources. I also add fruit, but not too much as I have found that my stomach reacts badly to a lot of the acid from some fruits. I use nut milk, for extra protein, and water for the sheer creaminess of it!  The discovery of egg whites in my porridge was a game changer, I like them to be thick and stodgy and that’s what the egg white does! The addition of a plant based protein powder also adds to the cakey texture and volume. I find I prefer vanilla, cacao or peanut flavours in my protein.

Depending on time and mood, I sometimes cook my oats on the hob but to be honest, mostly I use the microwave (I know some people are not fans of this method but I can’t see it as a problem and it works!) I also think I will be switching to a lot more overnight oats when I am back at work for both me and baby boy!

When I’m adding egg white to my oats I always cook them for about a minute first without the egg white then add it to cook for about another minute until its thickened up the mixture. On days when I need an extra bit of oomph for a nap time workout or ‘one fit mama’ class, I’ll add a table spoon of maca powder for energy and it is also great for balancing hormones, something I really need after having a baby!

 

Simple cinnamon and date oatsIMG_8529

  • ½ cup of gluten free oats (I mix quick oats with jumbo oats)
  • 200ml nut milk
  • Splash of water (enough to cover the oats)
  • 1 tsp cinnamon
  • 1 date chopped
  • 1 egg white
  • ¼ mashed banana

 

 

Turmeric chai latte oatsIMG_8584

  • ½ cup of gluten free oats (I mix quick oats with jumbo oats)
  • ½ carton of love raw turmeric chai latte
  • Splash of water (enough to cover the oats)
  • 1 date chopped
  • 1 tsp flaxseed`

 

 

Pumpkin pie oatsIMG_8672

  • ½ cup of gluten free oats (I mix quick oats with jumbo oats)
  • 200ml nut milk
  • Splash of water (enough to cover the oats)
  • 2 tbsp pumpkin puree
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp chia seeds

 

Vanilla and cinnamon oatsIMG_8761

  • ½ cup of gluten free oats (I mix quick oats with jumbo oats)
  • 200ml nut milk
  • Splash of water (enough to cover the oats)
  • 1 tsp cinnamon
  • 1 scoop vanilla plant based protein (I missfits nutrition multitasker)
  • ¼ mashed banana
  • 1 tsp flaxseed

 

 

Tropical coconut and mango oatsIMG_8859

  • ½ cup of gluten free oats (I mix quick oats with jumbo oats)
  • 200ml nut milk
  • Splash of water (enough to cover the oats)
  • 1 tsp coconut flour (I use the groovy food company)
  • 1 egg white
  • 1 date chopped

 

Toppings:

  1. Coconut yogurt
  2. Frozen mango
  3. Coconut and almond butter (I use pip and nut)

 

So there you have it, my favourite go to porridge recipes full of all the good stuff, protein, carbohydrates, calcium, good fats and most of all great taste!
